Watson Dairy Consulting is the trading name of JWC Services Ltd, a UK (Scotland) registered limited company providing independent specialist support to the global dairy manufacturing sector. Established in 1998, the business is led by John Watson, a longstanding member of the Society of Dairy Technology and a Fellow of the Institute of Food Science & Technology (FIFST).

The consultancy works with clients on high-value and technically demanding dairy projects where genuinely independent judgement matters. Leadership

Watson Dairy Consulting is led by its founder, John Watson, who established the business in 1998 after a career in dairy manufacturing. John is a longstanding member of the Society of Dairy Technology and a Fellow of the Institute of Food Science & Technology (FIFST), and brings over 50 years of practical experience to client projects. His standing in the industry means his independent technical opinion is sought not only by manufacturers and investors, but also by Environmental Health Officers (EHO), the US Food and Drug Administration (FDA) and other government agencies requiring credible dairy expertise.

Quality, Hygiene and Food Safety

Every dairy project is assessed with hygiene, food safety and product quality treated as core commercial issues, not afterthoughts. This is grounded in direct, hands-on experience: John Watson has designed and implemented an ISO 22000 Food Safety Management System (FSMS) for infant formula manufacture — one of the most demanding food safety environments in the sector. That practical experience of building a working FSMS from the ground up, rather than reviewing one from the outside, informs the food safety and quality advice provided to every client.

Infant Formula Expertise

Infant formula is one of the most technically demanding and tightly regulated areas of dairy manufacturing, and it is a particular area of specialist focus for Watson Dairy Consulting. Support covers infant formula process design, factory and plant design, wet and dry blending, spray drying, evaporation, product quality, hygienic design and the operability and yield considerations specific to infant nutrition production. Having designed and implemented an ISO 22000 Food Safety Management System for infant formula, John Watson brings direct, practical experience of the food safety, traceability and quality demands this category requires. John Watson of Watson Dairy Consulting was an invited panellist at the public session of the US National Academies of Sciences, Engineering, and Medicine’s Committee on Challenges in Supply, Market Competition, and Regulation of Infant Formula (Meeting 13, 1 December 2023), speaking on infant formula manufacturing and the US infant formula shortage.
