The Challenge
Establish recipes and local manufacture of liquid soft-serve frozen yogurt for a new UAE retail outlet. The product needed to be clean-tasting, tart, low-calorie and prebiotic, using locally available ingredients. The client required an equipment sourcing brief alongside the recipe work.
The Approach
- Prepared a summary of requirements and a manufacturing brief
- Developed recipes with ingredients list and manufacturing instructions
- Prepared equipment sourcing brief for the client
- Supported client through equipment selection process
The Outcome
Project completed Q3 2009 with the client equipped to manufacture commercial-quality frozen yogurt locally, on a footing comparable to the Turkish project that built the regional category leader.
